Sauced fries have a short window. Buffalo sauce softens a fry within minutes, so bake the frozen fries a few minutes past the package time until they're properly crisp, and toss them only when everything else is ready for the table.

Melting butter into the buffalo sauce rounds out its vinegar and helps it cling in a thin, even coat. Ranch goes on as a drizzle, not a pour, followed by blue cheese crumbles and celery leaves, which taste like a milder, grassier celery and give the plate something fresh. Put extra ranch and sauce on the side.

Instructions

Tap a step to keep your place.

  1. Bake 2 lb frozen fries according to package directions until extra crispy.

  2. While fries bake, combine ½ cup buffalo sauce with 1 oz melted butter in a large bowl.

  3. Transfer hot fries to the bowl with buffalo sauce and toss until evenly coated.

  4. Arrange buffalo fries on a serving platter.

  5. Drizzle ½ cup ranch dressing over the fries in a zigzag pattern.

  6. Top with 2 oz blue cheese crumbles and 1 oz celery leaves.

  7. Season with salt to taste and serve with extra ranch and buffalo sauce on the side for dipping, if you like.

Tips

  • Toss the fries by shaking the bowl or lifting them with tongs. Stirring with a spoon breaks them and turns the coating pasty.
  • Spread the fries on the sheet pan with space between them. Crowded fries steam and never get crisp enough to carry the sauce.
  • For a neat zigzag, spoon the ranch into a zip-top bag, snip a small corner and pipe it over.
  • Use a wide bowl and warm the buffalo butter if it has thickened. Cold sauce clumps on hot fries instead of coating them.

Substitutions

  • Blue cheese dressing instead of ranch: sharper, and it doubles up on the crumbles.
  • Air fryer instead of the oven: cook the fries in batches until extra crisp, then toss as written.
  • Dairy-free: use olive oil instead of butter, a vegan ranch, and leave off the blue cheese.
  • Tater tots instead of fries: more crunchy surface, so they hold the sauce a little longer.

Make ahead & storage

These are best eaten right away, before the sauce softens the fries. Leftovers keep 3 to 4 days in the fridge; reheat them on a rack in a 425°F (220°C) oven until hot, then add fresh ranch.
